I received a request for this miso ice cream recipe from a person
who saw the NHK programme. If there are any other questions
or requests, please let me know.
(Ingredients)
Milk 450cc
(Light) brown sugar 60g
Red miso 20-25g (We use our 1 year bean and rice miso)
Egg yolks 3
Fresh cream 50cc
Chopped almonds (to your liking)
Vanilla essence (to your liking)
1.Add the sugar to the milk. Warm on a medium heat.
Cool. Add egg yolks and whisk. Strain the mixture.
2.Put back to a low heat. Mix well. (Be careful the milk and egg
yolks do not separate.)
3.When it thickens take it off the heat and cool by putting the pan in a bowl of iced water. While cooling keep on mixing with spatula
(so eggs don't get hard).
4. When it's cool, add fresh cream, miso and vanilla. Mix well.
Put the mixture in the freezer.
5. While freezing mix 2 or 3 times so it becomes smooth.
The second time you mix add the chopped almonds.
