先日、 東京の三越百貨店で一週間催しがありました。初めて味噌を東京で売りました。
初日の開店前の写真を見て頂いたら分かって頂けると思います.....かなり緊張しました。
外国人が味噌を売っているので「びっくり」というのが糸口になって味噌を紹介ができました。
なかなか勉強になりました。
東京の方々は大阪よりコイアジが好きです。
それに、白味噌というと大阪では甘口の塩分の低い味噌を思い浮かべますが東京では信州味噌を思い浮かべられるようです。
東京にも甘口の味噌がありますがそれも赤味噌(江戸前赤味噌)....それぞれの地域の特徴がまだまだ残っているんだと痛感しました。

Last week for eight days we had a sales event in Tokyo Mitsukoshi department store. We have customers in Tokyo, but it was the first time I had sold miso there directly to the consumer.
If you look at the photo taken just before opening on the first day you can see I was a little anxious.
Seeing a foreigner standing there selling one of Japan's traditional foods produced a not unexpected reaction of surprise. While not getting the open hearted conversation that often occurs in Osaka, I did manage to draw people's attention and introduce our products.
It was interesting to observe the difference in taste. Tokyoites prefer a stronger tasting miso (like our two year red miso). Also, in Osaka
white miso means sweet low salt miso while in Tokyo it means the higher salt light brown miso of Shinshu. There is a sweetish miso in Tokyo. but this is a red miso (Edomae Red Miso).
Even in this era of mass consumption different regions still maintain their particular tastes.
